"...I can say with a reasonable degree of certainty that the Turks & Caicos Islands are uncharted territory for the Michelin Guide or other such esteemed publications in search of establishments worthy of their coveted stars, however upon the discovery of this gastronomic gem, there is not a shred of doubt in my mind that O’Soleil would indeed, shine!" ~ Mandy Rostance-Wolf, WhereWhenHow Magazine
Thanksgiving Cranberry Sauce
Chef Lauren Callighen
November, 2009
This is the simplest and most delicious cranberry sauce you will ever try. The vanilla bean is a unique twist, but it will compliment your turkey perfectly. I don't use any gelatin in my cranberry sauce, just let the natural pectin of the fruit do its job by cooking over low heat for a long period of time - the perfect set it and forget it recipe!
Ingredients
- 2 cups of cranberries (fresh or frozen will do)
- 1 x vanilla bean, split down the centre
- 1 x cinnamon stick
- 1 x piece of star anise
- 1 x orange, zest
- 2 x orange, juiced
- 1/2 cup of brown sugar (use more or less depending on your taste)
- 1 cup of water
Directions
- Place all ingredients in a heavy bottomed saucepan and bring to a boil over med heat
- Reduce heat to a simmer, and cook until the cranberries are soft and the sauce is thick
Enjoy!
